Thanksgiving is next week and I'm ready to stuff myself so full of delicious food. My dad is coming out here to be with us and that makes me even more excited because he makes the best pies in the world! No lie. People buy his pies because they are that good. My favorite has always been his apple pie that he makes. Last year I made this pumpkin pie and it was so delicious. It is from Savory Sweet Life and I'm telling you...it is worth it. What are some of your favorite dishes on Thanksgiving?!

Ingredients
  • 1-15 ounce can pumpkin puree
  • ¾ cup packed brown sugar
  • ¼ teaspoon salt
  • ¾ teaspoon cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon nutmeg
  • ¼ teaspoon ground cloves
  • 2 eggs
  • 1 egg yolk
  • ½ cup evaporated milk
  • ½ cup heavy cream
  • 1 -9 inch unbaked pie crust 
Instructions
  1. Set a rimmed baking sheet on the center rack in the oven.
  2. Preheat oven to 400 degrees F.
  3. In a medium bowl, mix pumpkin, brown sugar, salt, cinnamon, ginger, nutmeg, and cloves until well combined.
  4. Add eggs, evaporated milk, and heavy cream.
  5. Mix everything until completely smooth 
  6. Pour pie filling into an unbaked deep dish pie shell.
  7. Bake the pie for 15 minutes then reduce the oven temperature to 350 degrees F.
  8. Bake for an additional 50-55 minutes until the center of the pie does not jiggle (loosely).
  9. It’s best to allow the pie to cool on the counter and then chill it in the refrigerator before serving.
  10. Serve with a dollop of whipped cream.

Tasty Tuesday-Lemon Glazed Cupcakes



So I just love getting new recipes! From friends, family, or pinterest! There will be a new segment coming to the blog next week. Now for my recipe this week! Lemon Glazed Cupcakes! Yum!






These cupcakes are a last Summer recipe! Not that these can't be made year round, but in honor of Summer, why not end with a delicious Summer taste. Lemon! It's really the glaze I'm focusing on. For the cupcake, I just used a yellow cake box and added a tbsn of lemon extract to give it a slight lemon taste.


Ingredients 


  • 4 1/2 cups confectioners sugar
  • 1/2 cup of butter softened
  • 1/4 cup of milk
  • 1 tspn vanilla
  • 1 tbsn lemon zest 
  • 2 tbsn lemon juice

  • 2 tbsn lemon extract 



Directions (Glaze)

1. Mix butter and 3 1/2 cups of sugar. Mix until soft.

2. Slowly add in milk, vanilla, and lemon juice.

3. Add in the cup of sugar that is left slowly. Trying to get the right consistency can be hard. I wanted a glaze, but a fluffy glaze. So add more sugar if needed and balance the sweetness by adding more lemon extract.

4. Add lemon extract and lemon zest.

5. (optional) I added a few drops of yellow coloring to get a yellowish tint to the glaze.

6. I kept my mixer on for about 4 mins, just to get that consistency that I wanted. 
**I also added a light dash of sprinkles on top.
