Thanksgiving is next week and I'm ready to stuff myself so full of delicious food. My dad is coming out here to be with us and that makes me even more excited because he makes the best pies in the world! No lie. People buy his pies because they are that good. My favorite has always been his apple pie that he makes. Last year I made this pumpkin pie and it was so delicious. It is from Savory Sweet Life and I'm telling you...it is worth it. What are some of your favorite dishes on Thanksgiving?!

Ingredients
  • 1-15 ounce can pumpkin puree
  • ¾ cup packed brown sugar
  • ¼ teaspoon salt
  • ¾ teaspoon cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon nutmeg
  • ¼ teaspoon ground cloves
  • 2 eggs
  • 1 egg yolk
  • ½ cup evaporated milk
  • ½ cup heavy cream
  • 1 -9 inch unbaked pie crust 
Instructions
  1. Set a rimmed baking sheet on the center rack in the oven.
  2. Preheat oven to 400 degrees F.
  3. In a medium bowl, mix pumpkin, brown sugar, salt, cinnamon, ginger, nutmeg, and cloves until well combined.
  4. Add eggs, evaporated milk, and heavy cream.
  5. Mix everything until completely smooth 
  6. Pour pie filling into an unbaked deep dish pie shell.
  7. Bake the pie for 15 minutes then reduce the oven temperature to 350 degrees F.
  8. Bake for an additional 50-55 minutes until the center of the pie does not jiggle (loosely).
  9. It’s best to allow the pie to cool on the counter and then chill it in the refrigerator before serving.
  10. Serve with a dollop of whipped cream.

I'm going to keep going on the Fall foods! Have to take advantage of them while I can! Now for a little pumpkin spice muffins with cream cheese frosting. Recipe from The Pioneer Woman. Seriously so yummy and addicting!




Ingredients:

1 cup all-purpose flour

1/2 cup sugar
2 teaspoons baking powder
1 1/2 teaspoon cinnamon
1/4 teaspoon ground ginger
1/2 teaspoon nutmeg
1/2 teaspoon salt
4 tablespoons butter, cut into pieces
1 cup pumpkin puree
1/2 cup evaporated milk
1 egg
1 1/2 teaspoon vanilla

Topping on Muffin:

2 tablespoons sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg


Frosting:

1/4 cup softened butter
4 ounces, weight cream cheese
1/2 pound powdered sugar
1/2 teaspoon vanilla


Preheat oven to 400 degrees. Grease 12 muffin tins.

Sift flour, sugar, baking powder, cinnamon, ginger, nutmeg, and salt. Cut in butter with two knives or a pastry blender until it is fully incorporated.

 In a separate bowl, mix together pumpkin, evaporated milk, egg, and vanilla. Pour pumpkin mixture into the flour mixture. Fold gently until mixture is just combined.

Pour into a greased muffin pan. Sprinkle with remaining cinnamon-sugar-nutmeg mixture over the top of each unbaked muffin.

Bake for 25 minutes. Cool for 15 minutes, 

 Ice with cream cheese frosting.


To make the frosting, mix all ingredients on high until soft and whipped. Spread onto cooled muffins.

The recipe I would like to share this week is from Our Best Bites. Yummy beef stew! The leaves are turning colors, the layers are getting thicker, and pumpkin spice is taking over! Fall is in the air folks! What's better than coming home after a long day to an all ready warm meal?! Beef stew is so good! My favorite is the carrots and potatoes :)



Ingredients

 -1 1/2-2 lb. lean stew beef, 
-5 medium red potatoes, chopped

-5 medium carrots, peeled and chopped
-4 stalks celery, chopped
-2 cups roughly chopped onions, one large or 2 small
-4 cloves garlic, minced
-2 12-oz. cans or 3 c. vegetable juice cocktail 
-1 10-oz. can condensed tomato soup
-10 oz. water
-1 tsp. basil
-2 beef bouillon cubes (or 2 tsp. beef base)
-1/2 tsp. freshly ground black pepper

Combine all ingredients in a slow cooker on low for 9-10 hours or high for 5-6.

My recipe this week comes from Green Smoothie Girl. I actually went to one her classes this past weekend and it was just amazing! So inspiring and it really makes you want to make a difference in the way you eat. That is what I'm doing, taking small steps to eating more whole foods. And drinking a green smoothie everyday. I actually won a prize while I was there as well! A powder that she made that is just full of minerals, fruits, vegetables, and loads of nutrients!

Don't mind the wood/dirt taste of it! Haha well that's just what I thought I tasted. If you need it more sweet, just add some more strawberries or stevia.

Ingredients

1 1/2 cups coconut liquid (I used coconut water from the store)

1 large carrot
1/4 of a beet, raw, peeled

1/4 cup of cashews

1/4 cup chopped dates 

2 tsp. vanilla

12 frozen strawberries


Mix together!!
