Sick, Soup, Stuffed

Don't you just hate when you are sick?! The sick where you are hot, but cold and you can't breath and you are just plain old miserable. Well that was me about a week ago. Caught the obnoxious head cold and today I'm still trying to get over it. So all week I was eating soup...breakfast, lunch, and dinner. I was getting tired of Progresso chicken noodle and wanted something with a lot of flavor! I put my stuffy thinking cap on and threw a tomato basil soup together. Oh I must say it was so good! It didn't take too long to make either. Dallin couldn't get enough of it. After every bite he would just make his "mmm" so good sound. So I will graciously share the recipe!

-4 cups canned, crushed tomatoes
-1 1/2 can chicken broth
-3 1/2 cups tomato juice
-10 basil leaves
-3 tbsp dried basil
-1 cup half n half
-1/4 lb unsalted butter
-half of lemon
-1 tbsn pepper
-1/4 tbsn garlic powder
-1/4 tbsn onion powder
-salt to flavor

1. Combine canned tomatoes, tomato juice, and chicken broth. Bring to simmer for about 15-20 mins. While that is simmering scoop a cup of the liquid and take basil leaves and combine in blender. (I used my bender but there are more tech savvy kitchen supplies to chop up basil leaves). Once combined, pour basil mix back into the pot.

2. Slowly mix in half n half and butter. Squeeze in half of the lemon or the whole thing, but I just prefer a slight lemon taste. Stir for about 5 mins until all of butter in melted.

3. Mix in dried basil,  pepper, garlic powder, onion powder, and salt. 

4. Heat to your liking!

I like to dip saltine crackers in mine, but your favorite bread would be amazing as well! This soup to me is the perfect combination and just so creamy. So being sick, this was just the perfect comfort food to eat while curled up under a blanket on the couch.

The moral of this post is...being sick you just really want some soup. Once you eat the soup you become stuffed. Sick to soup to stuffed...stomach and nose ;)


Here is my soup...this was before the half n half so the color will actually be lighter and creamier.
