Veggie Enchiladas-Open

I could eat Mexican everyday. Literally. I love it so much. The end.

Ay Caramba!

Ok so really I've got a delicious recipe that everyone should try. We've been trying to eat less meat around here. You know everything that is put into food now kind of grosses me out. I've even stopped drinking milk. Almond milk! Anyways....veggie enchiladas! Except they are open like a quesadilla! 

Ingredients
-bell peppers
-tomato
-shredded cheese
-sour cream
-cilantro
-tortillas
-avocado
-red enchilada sauce
(You can really put anything on these...i.e.-onions, olives, etc.)

Directions
1. Put the oven on 400. Put your tortillas on a pan and put in the oven for about 4-5 mins. Wait until they start rising then take them out.



2. Cut up your vegetables. I put the peppers in a pan with a little bit of olive oil until they soften up.


3. Pour a little of the enchilada sauce on each tortilla then put the peppers on. Add cheese on top of that.

4. Put back into the oven until the cheese is melted.

5. Take out and add whatever else you please. Everything that is under "ingredients" is what I chose.



It was delicious and will definitely be something that I make again!

Creamy Avocado Pasta

Need a good and easy recipe?! It's quite simple and I found it at Two Peas & Their Pod! It use to be where I couldn't stand avocado,
 but now I love it! 



Ingredients
-6 oz pasta
-1 large, ripe avocado, pitted
-1 tbsn lime juice
-1 clove garlic, minced
-1/4 cup fresh cilantro, chopped
-1/2 tspn salt
-black pepper to taste

Directions

1. Bring water to a boil in a medium sized pot. Salt the water and add in your pasta, reduce heat to medium, and cook.
2. While the pasta is cooking, make the sauce by placing the avocado, garlic, lime juice, cilantro, salt and pepper into a food processor or blender. Process until smooth and creamy.
3. When pasta is done cooking, drain and place pasta into a large bowl. Add the sauce to the pasta and toss until pasta is well coated. Season with additional salt and pepper, if desired. Serve immediately.

Spring Vibe

I can't believe Easter is less than a week away! Which means my dad is out here in less than 2 weeks! YEEEEE! Even though the snow this past weekend in Utah threw off my Spring vibe...it came back with the making of a Spring bouquet! 


Madeline (from Mads in Real Life) and I had ourselves a little crafty night. Even though Easter is just about come and gone, it's always nice to have a nice Spring look in the household. Super easy to do. We both already had our own vases, then just went to the dollar store and got the rest! We were quite impressed with their selection of fake flowers. Go DOLLAR TREE!



So pretty :) I'll just replace the eggs after Sunday :)

The Piano Days

It's so nice to find your own personal stress reliever or relievers. I have been playing the piano for about 11 years. I could go play for a few hours and just feel calm and peaceful. I had a piano back home at my parent's house, but now that I have moved and live on my own; I don't have that luxury anymore. It makes me realize how much I miss it...the piano days. Dallin and I are actually doing a musical number in church this Sunday! He plays violin, so we are doing a duet to an amazing grace medley. Wish us luck!

One More Snow

Who else has been enjoying this warm weather?! You know I have since I have been talking about it nonstop for the past month! But I made an exception for the snow. I had one more snow day. I had some family come out here from NC so we spent Sunday with them. So much fun! I love seeing familiar faces out here, family that is. :)

We started the morning out with snowmobiling then went snowboarding that afternoon. Hah..usually it's snowmobiling one weekend and snowboarding another. But hey..one more snow day so why not go all out?? We had a blast with them. We went to Strawberry Bay for snowmobiling which was my first time. So cool. Only got stuck once, but they say if you don't get stuck you're not playing hard enough. :)





For snowboarding we went to Park City. Such a beautiful day. They had a live band out playing by the lift celebrating St Patrick's Day. Gorgeous slopes.

Then to finish the night, we made some green drink!



-1/4 pineapple juice
-3/4 ginger ale
-scoops of lime sherbet

Spring Nails

Yesterday I had a ME day or morning, well until D came home..which is totally fine, but it was nice having some time to do what I wanted. Woke up, immediately opened the windows and started cleaning. Like really cleaning. Scrub down everything, places you wouldn't even think of. It was actually quite nice. Turn my music on and get to work. 

My choice of the day was Lady Gaga Pandora station (pretty disappointing today, played maybe 3 LG songs). If you didn't know already..I love Lady Gaga! But Pandora was not on point today.

ANYWAYS...to add to my me time...I did my nails! A little Spring design? Next time I will go for a lighter blue though.

I just used a really small paint brush and a toothpick.
The first layer and let dry.
Then the pink and the green leaves; let dry.
Then a white dot with a toothpick!

Strawberry Lemonade

What's more refreshing than a glass of cold lemonade on a hot day?? Well maybe a glass of cold strawberry lemonade! I love strawberries! I love lemon anything! Got some girl scout cookies this past weekend, the lemon smiles...the box is just about gone. Too addicting! I found this recipe off the food network and it is quite delicious. Kind of the perfect mix of lemon and strawberry. There isn't an overwhelming taste of tart.

Ingredients
-2 cups water
-1 cup sugar
-1 cup fresh lemon juice
-1 pint strawberries
-2 cups club soda

In a medium saucepan, bring the water and sugar to a boil. Reduce the heat and simmer, stirring occasionally, until the sugar dissolves. Add the lemon juice, stir, and remove from the heat. 

Let it cool and strain into a pitcher.

In a blender, puree the pint of strawberries and add to the pitcher with the lemon juice. Stir well to combine and refrigerate until well chilled.

Add the club soda, stir, and pour into your glass with ice.

My favorite commercial is finally out and about! But most importantly, my favorite Reese's is out! I could live off peanut butter. When I first went out to college, that's all I really ate. Well, most of the time. Peanut butter on Ritz crackers with a cup o' milk. Yum! Or when I have to get up really early in the morning I'm not really in the breakfast eating mood, but I will eat a piece of toast with peanut butter. Peanut butter on bananas, peanut butter in grape nuts and milk, peanut butter on apples. None of those are really strange, I just could eat it everyday for the rest of my life and be content.

Stress Free Spring

No one ever wants to be stressed out. Especially when warm weather is coming, like Spring and then Summer. Spring is the time to start anew! Maybe some of my own personal tips can help?

Tip #1- Spring cleaning is a known phrase for a lot of homeowners, apartment owners, mothers, well, really just everyone. A time when the house you are living in takes priority over everything else. Okay, maybe not to that extent. To make it a little less stressful and to not dread Spring cleaning coming around, why not do it at the end of Winter?! As in do it a little earlier. Get it out of the way before the warm weather comes so you can really enjoy Spring.

Tip #2- Try putting flowers up around the house. I actually have flowers everywhere and I love it. All fake, but still very effective. Usually when one receives flowers, you become happy. So flowers help tap into your emotions and help induce a positive attitude. I would love to have real flowers everywhere. Tending to plants is soothing and stress relieving.
This is what I have beside my door...

Tip #3- Walk outside a little more. Exercise is definitely a stress reliever. I'm not saying go run 6 miles outside, just a leisurely walk around the neighborhood or the nearby park. Try to get your mind off things or the other way around and give yourself time to think about things in life! A little quiet time to yourself can help in a lot of situations.

Tip #4- When the weather is appropriate, open the windows. Fresh air never hurt anyone. Nature can be a huge stress reliever. The sun can brighten up a mood or even the sound of birds outside. Bring that sunshine in and load up on the Vitamin D you were missing out on this past Winter!

Tip #5- Plan a trip. Spring break is here or coming soon! (Except poor Dallin and the other BYU students, no Spring break for them unfortunately). So for those who do not have that, try and plan even just a weekend away. Away from the place that gives you stress. Even with Spring break; doesn't have to be a huge planned out vacation to the Cayman Islands, even though that would be wonderful. Just a simple little getaway can be such a relaxing thing. Nothing wrong with going home either :)


Maybe they work for you, maybe they don't. But everyone should love to be stress free!

Spring Makeup

I was talking with a friend about makeup the other night and we were discussing if makeup goes through trends. Came to the conclusion that yes, of course it does. 

20s-heavy on the eye shadow
50s-red lips and winged eyeliner 
80s-the whole rainbow on the eyes

Bright seems to be the Spring look this year. Some blues and greens for the eyes. Fuchsia for the lips. A little highlighter for the cheekbones and above the eyebrows. Now, I have always liked my browns. Neutral and safe. Pretty much goes with everything. You can make it a day look or go for the more dramatic, night look. But.... I did go out on a limb and got some "Spring" eye shadow colors to give it a try.


I really like this palette. Purples really brings out hazel eyes (perfect! that's what I have). The green is very pretty, especially out in the sun with the shimmer.

Both are from MAC. This is my favorite highlighter. Mineralize skin finish is MAC's brand and mine is called LIGHTSCAPADE. LOVE it!

No matter what personal or favorite trend is; it's always fun to step out of the box and try something new!

Spring Forward

I think I want all of my posts Spring related until it actually arrives. The fact that they are calling for snow this weekend has me beyond frustrated! NO MORE SNOW! So lets just keep our fingers crossed. The weather has actually been quite nice. Windows were down this past weekend. Also I want to make note of the time change this Sunday. Back to the sun being out longer!




Easter this year will actually be in March. March 31st to be exact. It's funny how Easter changes so drastically. I remember my birthday was on Easter once and that's in the middle of April. I love Easter! I love new Easter Sunday dresses. I love Easter baskets. I love being with family. And I mostly love the true meaning of Easter, that is that Jesus Christ rose from the tomb. 

Since it is in March, I will go ahead and put my decor out!

Indian Healing Clay

Ok...this may make me sound like a goon, but I have found the "AZTEC SECRET!" Haha... no but I have some cool clay stuff that I've been putting on my face. My mom did the research on this and decided to try it out. It made for a good family night. My mom and I put it on our faces, then the boys were so jealous that they just had to try it as well!



So it's called Bentonite Clay. It is said to be very healing. In fact...if you go back to the Bible in 
John 9: 6-7, it says, 
"When he had thus spoken, he spat on the ground, and made clay out of the spittle, and he anointed the eyes of the blind man with the clay, And said unto him, Go, wash in the pool of Siloam. He went his way therefore, and washed, and came seeing." 

Pretty neat to think about, that clay has healed the blind. There are many uses for this. You can use it for:
-Bug bites, itching skin, skin allergies
-Detox bath
-Morning sickness or nausea (so yes you can drink this)
-Face Mask

I'm using it for my face. The dry weather out here is not good for me! I seem to break out out here and it is quite obnoxious! But you can honestly use it for most anything! It is easy to get together as well. You just mix it with water, half and half, but it cannot touch any metal! So I put mine in a plastic bowl and use a wooden spoon! For my face...I put a layer on and leave it there for 20 minutes. It's so cool! My face hardens where I can barely talk and it makes my face so tight! Once I wash it off my face feels so smooth, as in I can't stop touching it which probably defeats the purpose of helping my break outs.





My face has officially hardened!!

It's definitely a very interesting thing and so far I love it! Dallin has been getting a rash on his hands so I've been putting it on them once a week and the inflammation has decreased and the itching has stopped!
